Clouds and silver linings.

Clouds, they’ve brought us a lot of rain this year! Potentially the reason a thumb went through one of the pumpkins in my pantry stash. Not one to waste food, I used an ice cream scoop to remove the squishy bits, and set to dicing the rest for chutney.

Preserving is a great way to manage one’s excess home grown produce and thus avoid food waste. A silver lining has to be the full compost bucket of peelings and scraps from the pumpkin, apples, onions, chilli and ginger I put in, and the diced apple core for the chook scraps tub. The pumpkin, chilli and the turmeric are home grown, this feels good too. The jars, they're recycled, on their 2nd, 3rd, 4th use?

Worried about your pumpkin stash too? I can highly recommend this recipe: https://www.bbcgoodfood.com/recipes/spicy-squash-apple-chutney
